Idk what counts as AAA but I know at least Lusterise, Dark One, Triangle, Poison, ClockUp, Waffle, and Bishop still make visual novels like this too. Maybe not exactly though. I know Guilty, Valkyrie, and Liquid still make visual novels like this frequently.
I mean AAA visual novels are those with expensive prices, not doujin ones with cheaper prices.
